This is my favorite weekend lunch, seriously I am pretty sure I have made it for the past few months for lunch! It is super yummy and everything I alter the recipe it gets better
Ingredients
Ground almonds or almond meal (I threw a cup of whole almonds in the food processor)
2 large zucchini
Olive or coconut oil for the pan
Garlic powder
Prosciutto
Onions
Tomatoes
Parmesan cheese
2 eggs
Preheat oven to 375
Ground almonds
Beat eggs
Wash and slice zucchini, I use a mandolin for all slicing in this recipe. Zucchini you want a little thick, tomatoes and onions super thin
Coat zucchini slices in egg then in almonds
Place slices on oiled cookie sheet sprinkle with garlic powder and bake for 10 minutes
While zucchini is baking first round slice tomatoes and onions.
When zucchini is done pull out and place a slice if prosciutto on each zucchini then layer thin sliced onions and tomatoes. Sprinkle each slice with a little Parmesan cheese.
Bake with toppings at 375 for 10 minutes.
Cool and enjoy!
