The smell of cinnamon filled the air as we opened the oven to check on the delicious goodies baking inside. Fresh gluten free cinnamon rolls along side the Challah bread. Check out the Cinnamon Roll recipe and a review of the Legit Bread Company’s Holiday Bundle below.
Cinnamon Roll Recipe:

Ingredients:
For the Rolls:
1/4 cup butter
1 cup Almond milk
1/3 C + 1 tbsp sugar (separated)
2 1/4 tea yeast
1 large egg (room temperature)
2 1/2 cups gluten free flour (I used Bob’s Red Mill one to one baking flour)
2 tea baking powder
1/4 tea salt
For the Filling:
1/2 cup sugar
2 tbsp Cinnamon
1/3 cup butter
For the Icing:
1/3 cup butter
1/2 cup Maple Syrup
1/4 cup coconut milk
1 tea vanilla
Directions – read all the directions before starting, lots of steps to follow.
- Add butter to large glass bowl then melt in microwave, add milk and 1 tbsp sugar, then microwave for an additional 45 seconds. Stir with spatula then take temp, should be at least 110 degrees. Sprinkle the yeast and gently stir. Let sit until foamy, about 8 minutes.
- In a small bowl whisk the egg and 1/3 cup sugar, then add to the yeast mixture and stir to combine.
- In a larger bowl add flour, baking powder, and salt then stir. Pour in the wet mixture and stir until incorporated (small lumps are fine).
- Cover large bowl with a towel and sit in a warm place, this is when I realized that sitting my bowl outside in the sun is the perfect ‘proofing’ spot. Let sit for 1 hour.
- Combing sugar and cinnamon to make filling, and melt the remaining butter in a small bowl or cup.
- Spray pie pan, or cake pan with oil and set aside.
- Scrape the dough onto a lightly greased parchment paper.
- Lightly oil your hands and spread the dough into a 1/4 inch thick rectangle.
- Using fingers spread butter across the dough, then sprinkle with the cinnamon and sugar mixture.
- Use the parchment paper to roll the dough into a log, and then using a knife cut the dough into equal pieces. This recipe made 8 equal pieces for me. Place each piece in the pan.
- Then let rise in a warm place for 30-40 minutes.
- Preheat the oven to 350 degrees, then bake the cinnamon rolls for 16-20 minutes. *Mine were perfect in 18 with a gas oven an no elevation.
- Let rolls cool and make icing.
- In a sauce pan, melt the butter, then add the syrup, vanilla, and milk. Let come to a boil it will begin to thicken, then once it reaches your desired consistency our over the cinnamon rolls.

Legit Bread Company Challah Mix Review
The Legit Bread Company has really up’d their game this year and came out with a holiday bundle of mixes including Challah Bread, Pie Crust, Sugar Cookies, and a Everything Dough mix. We also added to our purchase our favorite Sandwich bread mix, the Blonde Mix.
Here is what I like about these mixes; they are pretty easy, adding a few of your own ingredients like eggs, oil, honey, yeast or gelatin depending on the mix. They taste amazing and you get the fresh out of the oven homemade bread with a little less effort. The boys love them, and the Challah bread; although I had never made Challah before and have no frame of reference for what this is supposed to taste like, was delicious! Ayden asked if he could eat this everyday.
Here is the negative – they sold out of the Holiday Mix bundle very quickly! And having been using their sandwich bread mixes for the last year or two I was used to having to include eggs, honey, oil; however, the newer mixes have a few additional ingredients, like gelatin or yeast. As long as you are prepared with those ingredients it is easy peasy, just was a little surprised that I needed those additional ingredients with the mix.
