Valentines Day Treat – Gluten Free, and Delicious!

Well since I am working out a lot, and trying really hard to lose a little extra filling, I am trying to be as good as possible when it comes to my diet. The chocolate snack that was given this valentines day is Belgium Chocolate Progenex, what better gift than that of active recovery. However, after looking longingly at an Instagram I have decided to try my hand at making a gluten free berry ‘cheesecake’ for my valentines.

Ingredients:

2 cups raw cashews (soaked)

3/4 cup black berries

3/4 cup strawberries

1 cup almond milk

2 tbsp coconut oil

1 tsp vanilla

1 tbsp maple syrup

1 cup dates

1/2 cup chopped almonds

1/2 cup chopped pecans

1 tbsp molasses

1 tbsp butter

CRUST:

mix the almonds, pecans, dates, and molasses in the food processes, pulse until crumbled, then add 1 tablespoon butter, and pulse until the butter is crumbled into the nuts. Press into the bottom of a spring foam pan.

Then you will need to make the filling.

Put the 2 cups of soaked cashews into the food processor. Add the 2 tbsp coconut oil, 1 teaspoon vanilla and 1 tablespoon maple syrup about a 1/4 cup of almond milk, pulse until creamy. Separate into 3 putting one serving onto the ‘crust’ and spreading out, then place this in the freezer while you make the 2nd batch.

Put the blackberries into the food processor, with the 2nd batch of the cashew filling, then pulse until smooth, add some of the almond milk to make creamy. Pull the pan out of the freezer and pour the blackberry cashew mix onto the plain mix. Place the pan back into the freezer while you make the strawberry filling.

Put the strawberries into the food processor, with the 3rd batch of the cashew filling, then pulse until smooth, add some of the almond milk to make creamy. Pull the pan out of the freezer and pour the strawberry filling into the pan. Then place into the freezer for 3 hours.

I covered mine with plastic wrap.

When you remove from the freezer place fresh cut strawberries and raspberries on top with a few mint leaves, and serve. This time I used a larger pan, to get 8 equal slices, next time I will use a smaller pan so that the slices are thicker or more cashews:) Enjoy!! This is delicious.
